Another 'one gift fits all' idea: fingerless gloves. Depending on guage, style, color, they can be for anyone, and they are the best for using up stash yarn (so, ahem, we have space to store new yarn, of course)

I love the concept that you can't give the process! I sometimes give knitted gifts, but I know I have to switch to "product" mode when I do, or else not have a specific time when it's given, such as Christmas or birthday, but the person just gets it when it's done. --P
